  1. It’s been a hectic couple of weeks. Listened to the podcast earlier in the week and meant to comment, but didn’t until now. My daughter has always been a picky, if somewhat eclectic eater. She wouldn’t eat bread most of her life, though a few years before she was diagnosed, she did start eating peanut and butter sandwiches in her school lunch. Before that, we would pack sandwich meat and cheese slices. But she liked things like pickled okra.

    Anyway, we had no idea what we do for lunches after she was diagnosed. It had been hard to find a sandwich she would eat and most of the breads I had discovered and enjoyed, she didn’t like. Nor would she eat toasted bread, even before being diagnosed.

    Enter Udi’s white sandwich bread. We can take two frozen slices out of the freezer from a frozen loaf, make a peanut butter and jelly sandwich, put it in her lunchbox, and it thaws by the time lunch comes. Udi’s tastes good without toasting and my daughter likes it. We’ve tried a number of brands and this is the only one she will eat.

    Just a suggestion from our experience. Every child is different, but it might help.
